We’ve created three tasty ideas for a gourmet sandwich, baguette roll and pita wrap using the slow cooked venison leg meat. Rub olive oil all over venison leg of meat and sprinkle and rub in Traeger spice rub. Slow cook meat in Traeger grill, oven lid BBQ or conventional oven for 2 and a half hours or until meat is tender and medium rare to medium. Allow 10-15min rest time.

Sourdough gourmet sandwich
• Venison meat
• Cos lettuce
• Tomato
• Smoked Cheese
• Cucumber
• Pickles
• Mayonnaise
• Red Onions (Fried)
• Avocado
Arrange all ingredients onto your slices of sour dough bread. Optional is to grill slices with cheese

Venison Baguette roll
• Venison meat
• Cheese
• Red Onion (Fried)
• Mushroom sauce - Cook mushrooms in butter for 2-3mins on low heat. Sprinkle TBspn flour and mix and then add 1/2 cup milk. Keep stirring until sauce thickens
Slice baguette roll down the middle and arrange ingredients leaving the creamy sauce poured over last

Venison Greek pita
• Venison meat
• Grated carrot
• Grated beetroot
• Red cabbage sliced thinly
• Yellow capsicum
• Mint and cucumber sauce - Add one small tub of natural Greek yoghurt, lemon zest, squeeze of lemon juice, finely chopped fresh mint, cucumber sliced into small cubes. Mix altogether and refrigerate for 20-30mins
Arrange fresh ingredients first and then add the venison meat and top this of by drizzling the mint and cucumber sauce over the top
